The Secrets of the Cheese Cellar
Our journey begins in Campo Sasso’s renowned cheese cellar, where you’ll discover the fascinating science behind cheese aging. Learn how temperature, humidity, and time work together to develop the rich flavors and textures of different cheeses. We’ll explore the characteristics of young, semi-aged, and fully mature cheeses, tasting select examples to compare their transformations.
The Art of Cheese Cutting
Next, we’ll move into the practical side of cheese appreciation—cutting! Using professional tools and techniques, you’ll learn the best methods for slicing various cheese types, from creamy soft cheeses to firm, crumbly aged varieties. Understanding how to cut cheese properly enhances its presentation, texture, and even its taste. By the end of this session, you’ll have the skills to handle any cheese like a pro.
